Ula has been cooking for family and friends for many years. Her love is bringing people together to share their life over healthy organic cuisine. She has been learning the fine art of Oaxacan Cooking for many years. She's studied with the finest Chefs in Oaxaca to master their "Secret Recipes" so she could bring them back here to share with you! All the incredible and delicious mole sauce in the world started in Oaxaca! The meals are made from scratch. No artificial ingredients! Ula grinds the organic corn hand presses the taco shells and tortillas that are delivered fresh to you and your guests. All of this is done with love, great care and old world charm! ULITA’S COMMITMENT TO CLEAN AND HEALTHY FOOD 1. At Ulita’s we are committed to using the highest possible quality of the ingredients we use organic whenever possible. 2.If we use conventionally grown vegetables, we first soak them in water-white vinegar solution to get rid of pesticides and toxins 3. Our MASA (dough) for tortillas is made of 100% organic heirloom corn, sourced from local farmers. 4. We use locally sourced meats, tofu & we use extra-virgin olive oil, expeller-pressed rice bran oil and expeller-pressed sunflower oil to deep-fry in. 5. We use filtered water for all the cooking.

FOOD DICTIONARY CHICKEN PICADILLO FOR TACOS picadillo de pollo this chicken stew will surprise you with it’s delicious and satisfying taste. It’s sweetness balances out beautifully when folded into a tortilla and turned into a perfect TACO Ingredients: chicken, garlic, onion, tomatoes, tomatillo, herbs, ALMONDS, raisins, olives, ACV, brown sugar 
 BLACK BEAN PASTE pasta de frijol negro this wonderful and versatile dish has a texture similar to cream cheese, it’a traditionally flavored with avocado leaves. Spread it over your tortilla for an ultimate vegetarian TACO. Top with your favorite salsa and even mix with chicken or pork taco filling  Beans are organic and soaked overnight for better digestibility. 
 ORGANIC CORN TORTILLAS You might think - What’s the big deal about a tortilla?  Wait till you taste this homemade, stoneground and pressed tortilla made only with organic, non-gmo, heirloom corn! It’s like nothing you have ever had before! The corn is soaked overnight in the alkaline solution to bring out all the nutrition and then turned into MASA. These tortillas are very nutritious, always gluten-free, easily digestible and very satisfying!

 PICKLED SLAW very refreshing, made with organic cabbage and carrots. Bursting with flavor, vitamins and tummy-friendly  probiotics! 
 SALSAS 
 RUSTIC OAXACAN TOMATO SAUCE salsa roja basica this salsa is very versatile and can be used for many dishes. It can be compared to italian marinara, but not exactly. it’s chile based so can be slightly hot. Typically served warm/hot. 
 SMOKY MORITA SALSA salsa roja de morita indulge in this authentic taste of smoky deliciousness.  This combination of morita and guajillo chiles along with sourness of tomatillos will surprise and impress you! 
 GREEN SALSA salsa de tomatillo this beautiful, tart salsa is perfect to be used in many mexican dishes. Every ingredient is a healthy, nourishing and vitamin filled whole food! 
 MEXICAN RED RICE arroz a la mexicana we use only brown rice for excellent nutrition  Simple and delicious cooked in the pure of tomatoes and other vegetables as well as chicken broth. Eat with the black beans cooked in the pot (frijoles de la olla) for complete protein! 
 BLACK BEANS COOKED IN A POT  frijoles negros de la olla soaked overnight for better digestibility and cooked to perfection, traditionally flavored with epazote (this pungent herb is used extensively in central and southern mexican cooking) Addictive! 
 OAXACAN SOUR CREAM  crema oaxaquena rich and creamy with a hint of butter YUM! CHICKEN IN GREEN SALSA with chayotes and cactus pollo en salsa verde con chayote y nopales This wonderful chicken stew is packed with flavor and nutrition.
